Ingredients:
5–6 bunches of broccoli
5 cloves fresh garlic, finely chopped
2 zucchinis, cut into quarters
1 yellow squash, cut into quarters
1 lb linguini
High-quality olive oil
¼ cup half & half
½ cup dry white wine (Pinot Grigio recommended)
1 whole lemon, cut into 4–6 pieces
Salt, to taste
Red pepper flakes, to taste
High-quality shaved Parmesan
Instructions:
1. Steam the broccoli – In a large skillet, add the broccoli and ¼ cup of water. Cover and steam for 7–9 minutes until slightly soft. Remove from the pan and set aside.
2. Sauté the aromatics – Dry the hot pan, then coat it with olive oil. Add garlic, salt, and red pepper flakes. Squeeze the juice from one lemon wedge into the pan and sauté for 2 minutes.
3. Cook the zucchini and squash – Add the zucchini and yellow squash to the pan. Sauté for 7–9 minutes until slightly tender.
4. Combine the vegetables – Return the steamed broccoli to the pan. Sauté everything together (uncovered) for 20 minutes, stirring occasionally.
5. Boil the pasta – In a separate medium pot, bring salted water to a boil. Cook linguini to the lowest al dente range per the package instructions. Drain once done.
6. Deglaze the pan – Just before adding the pasta, squeeze in another lemon wedge and pour in the dry white wine. Stir to combine.
7. Mix in the pasta – Add the drained pasta to the pan, tossing everything together over medium heat.
8. Finish with cream – Pour in the half & half, stirring until everything is well coated and slightly creamy.
9. Serve & enjoy – Plate the pasta, top with shaved Parmesan, and enjoy!
